Struklji
This recipe was passed down from my great-grandmother who was born in Slovenia and immigrated to the U.S. in 1917. This is a rich dish incorporating fresh eggs, dairy, and flour rolled into a buttery swiss roll of goodness.
Ingredients
Filling
- 1 lb ricotta cheese
- 2 packages cream cheese softened to room temperature
Dry ingredients
- 3 c. flour
- 1 tsp. salt
Wet ingredients
- 6 eggs
- ½ c. warm water
Additional
- ½ c. butter melted
Instructions
- Combine ricotta and cream cheese in a bowl and set aside.
- Make a well in the dry ingredients, and pour egg/water mixture into the hole.
- Then add 1 additional coup of flour and knead dough until hard. Divide dough in half. Repeat. Roll one section of dough into a very thin long rectangle.
- Melt ¼ c. of butter. Spill onto rolled out dough. Spread with pastry brush.
- Spread half of the cheese mixture over butter with a spatula. Roll from each end, then push together to make it thicker. Roll into white cheese cloth. Bend to fit into pot of boiling water. Boil for ½ hour. Set on a cutting board until cool enough to take off cloth. Slice thin and serve with melted butter and drizzle with sugar (if desired)
