Bacon Chicken Brussel Sprouts

This is so good. It reminds me of a dip, but is a main entrée and is low carb. My family always enjoys this and it reheats well.

Ingredients

  • 1 lb Brussel sprouts Cut into 1/4th
  • 1 8 oz. cream cheese room temperature
  • ½ c. whipping or heavy cream
  • 1 tbsp minced garlic
  • ½ c. onion diced
  • ¼ c. mozzarella cheese shredded
  • ½ lb. bacon chopped
  • 1 tsp salt
  • 1 lb chicken chopped
  • ¼ c. parmesan cheese shredded

Instructions

  • Use an oven-proof skillet to cook chopped bacon until done to your liking. Remove bacon and set on a paper towel to absorb extra grease.
  • Use half of the bacon fat in the skillet and save the other half for the next step. Pan sear the Brussel sprouts until tender at medium heat. This will take approximately 8-10 minutes. Remove Brussel sprouts from skillet and set aside.
  • Use remaining bacon fat to pan fry the chicken pieces until fully cooked. Set aside.
  • Placed chopped onion and salt in skillet and cook until transparent. Add garlic and cook until fragrant (approximately 1-2 minutes). Be careful not to burn it.
  • Reduce heat to low and add cream cheese and cream to pan. Stir continuously until cream cheese is fully melted. Add bacon, chicken, and Brussel sprouts back into the skillet and stir. Sprinkle with mozzarella and parmesan cheese. Place under low broil for approximately 4 minutes. Remove from oven. Always leave a pot-holder on the handle to avoid burning yourself!
