Instant Pot Low Carb Taco Soup
I love this taco soup and it is great for those watching their carbs. Not that you can't add Doritos or Cheetos to the soup (my kids do that)!
Equipment

Ingredients
- 1½ lbs ground turkey
- 2 tbsp ground chili powder
- 1 tbsp dried minced onion
- 2 tsp minced garlic
- 2 tsp ground cumin
- 2 10 oz. cans diced tomatoes with chilis
- 32 oz. beef broth
- salt and pepper to taste
- 8 oz. cream cheese softened
- ½ c. whipping or heavy cream
Instructions
- Brown the turkey meat in the Instant Pot on the "Sauté" setting until no longer pink. Add beef broth, chili powder, minced onion, garlic, cumin, both cans of tomatoes with chilis, and salt and pepper to taste.
- Secure instant pot and turn to "Soup" setting for 5 minutes. Once done, let the soup sit for 10 minutes naturally releasing and then open the valve.
- Divide cream cheese into cubes and mix into the hot soup. Add cream and stir.
- Additional toppings include: Sour cream, shredded Cheddar or Mexican cheese, Doritos, corn chips, or any other topping you like to include on a shelled taco.
