Summer Berry Salad
My coworker, Ellen, used to bring this salad to work to share each year. We always looked forward to it. It's light, crisp, and hits the spot. Perfect for a potluck or summer barbeque.
Ingredients
- 5 oz. fresh spinach
- 1 c. strawberries sliced
- 1 c. blueberries
- ½ c. red onion diced
- 5 oz. crumbled feta cheese
- ½ c. slivered almonds
Poppyseed Dressing
- ½ c. light oil (e.g., Vegetable or Light Olive)
- 2 tbsp white vinegar (balsamic or raspberry also acceptable)
- ¼ c. sugar
- ½ tsp. poppyseeds
- ½ tsp. dried mustard
- ½ tsp. salt
Instructions
- Combine spinach, berries, onion, cheese, and almonds in a large bowl.
- In a separate bowl whisk all dressing ingredients together until combined. Apply desired amount of dressing to salad right before serving.
