Zucchini Bread

This is perfect for the summer when you are looking for things to do with your extra garden zucchini. Instead of leaving them on your neighbor’s doorstep and running away, at least make them this bread.


Dry Ingredients

  • 3 c. flour
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt

Wet ingredients

  • 3 eggs beaten
  • 2 c. granulated sugar
  • 2 c. shredded zucchini
  • ¾ c. vegetable oil
  • 1 tbsp vanilla extract


  • Whisk together dry ingredients in a large bowl. Set aside.
  • Add wet ingredients together (including sugar) into a medium bowl and mix.
  • Make a well in the center of the dry ingredients and place the wet ingredients into the center and mix until combined, but do not over stir. This can result in hard bread.
  • Grease two 8.5 x 4.5 pans and bake in oven at 350 degrees for 55-60 minutes.
